Sữa chua ngâm vào nước để lấy lại nhiệt độ bình thường.
Cho sữa đặc vào một thau sạch lớn. Cho 5 muỗng canh đường trắng.
Đong 1 lon nước thật sôi, cho vào hỗn hợp sữa đặc và đường. Khuấy đều cho sữa và đường tan hết.
Tiếp tục đong 1 lon sữa tươi vào thau sữa nóng.
Nhúng ngón tay vào hỗn hộp sữa, thấy sữa ấm vừa phải, dễ chịu thì cho 2 hộp sữa chua vào, khuấy đều.
Sau cùng, cho nốt phần sữa tươi còn lại trong hộp vào tô, khuấy đều.
Múc sữa chua cho vào các hộp nhựa. Với 1 lít sữa tươi và 1 lon sữa đặc, thường làm được 21 đến 23 hộp.
Để yên khoảng 5 phút cho sữa chua ổn định và vỡ hết bong bóng trên mặt rồi đậy nắp.
Xếp sữa chua xung quanh thùng giấy có lót giấy báo, chừa khoảng trống ở giữa. Sau đó, cho bóng đèn vào giữa, bật để bóng đèn ủ ấm sữa chua trong khoảng 5 đến 6 tiếng.
Sau khi ủ, sữa chua sẽ đặc lại. Cho vào ngăn mát tủ lạnh, dùng dần.
