Đây là một món cà ri theo kiểu Việt Nam, sử dụng bột cà ri, vị cay cay của ớt tươi và thơm nồng của bột quế. Thịt vịt xiêm ăn mềm hơn thịt vịt, ăn cùng cơm nóng thì ngon phải biết.
Thịt vịt xiêm mua về làm sạch với chút muối và rượu trắng, sau đó chặt miếng nhỏ. Ướp thịt với bột cà ri, muối, bột quế, tiêu, đường và dầu hào, để khoảng 1 - 2 tiếng cho ngấm đều.
Khoai tây rửa sạch, gọt vỏ, cắt làm tư, ngâm nước muối để tránh thâm, vớt ra để ráo, sau đó xào sơ với dầu ăn đến khi khoai săn lại.
Bắc nồi thịt vịt lên bếp, đun lửa lớn, vừa đun vừa đảo đều cho đến khi thịt chín thì vặn nhỏ lửa, đậy vung kín và đun khoảng một giờ. Đổ khoai lên trên bề mặt thịt và đun cùng thịt đến khi chín hẳn.
Múc cà ri vịt xiêm ra chén/tô. Ăn cùng với cơm nóng rất ngon.
